Vinification:

The Pinot Gris fermented in large wooden barrels, after which the alcohol was gently removed.

Controlled fermentation at 10-12°C in stainless steel tanks – fermentation time approx. 10 days and vegan maturation.
The alcohol is then gently removed from the finished wine using a batch process. After dealcoholization, carbon dioxide is added to the “wine.”
